Dr. Matthias Schmitt was born into a family winery at the Saar and after his Bachelor- and Masterdegree in Viticulture and Enology in Germany and France, he did a PhD in Enology. He is a researcher at Hochschule Geisenheim University with a focus on sparkling wine production and dealcoholized wine since 15 years. Besides his research activity he is Vice-President of the commission Technology at OIV. His research activity in terms of No/Low wines is about assessing new and alternative approaches to improve the technological methods for dealcoholization. Besides overcoming aroma deficits he focusses on ways to substitute the sensory character of ethanol.
